Tricia and David Parham produce their own smoked salmon using organic farmed salmon from the island of Skerries. They source their own wood, making their own sawdust, and do all the filleting, smoking and packaging of their produce. The types of smoked salmon available are plum wood, whisky barrel (with a little bit of Shetland peat), Hawthorn, Juniper, Beech, and Olive wood. We also do a delicious oak smoked haddock too!
